If it is a very noisy area, you might choose to go for the double glazed windows to help keep some of the sounds out, but that is totally your personal preference.

You may find that the most difficult part of the whole do it yourself conservatory may just be deciding on a builder to set out the base for you, and then put the pieces together for you, as his timing may be dependent on the weather conditions. But however long it requires to get it put together, it will be worth the delay, and before you know it, you will be selecting window shades for it, and maybe a nice fitted carpeting, whatever you have decided is appropriate for your new space.
